Welcome to veggin’ out with Jessica! I will be writing a column once a month to talk about health and wellness.
A little about myself: I am a physician assistant in a primary care office and also have a background in dermatology. I work with my husband who is a physician in the same practice and we are parents to our beautiful one-year-old daughter. Healthy living has always been a passion of mine. I feel that in medicine it is best to lead by example and when I tell my patients to eat healthy and exercise, I believe that it is imperative that I do so myself.
I used to run track and cross country in college so running has always been a huge part of my life. I try to run about 5 miles daily and to get in at least 10,000 active steps a day. I explain to my patients that they should strive for about 30 minutes a day of any physical activity of their choice that gets the pulse above 130 beats per minute. You can try some strenuous walking, biking, swimming or even just a 30-minute exercise video in the comfort of your home.
I also try to follow a mostly plant based diet with lean proteins. I am not a perfect eater and I am not a vegetarian! I wanted to start this column to show people that cooking healthy food doesn’t just mean eating steamed broccoli and boiled chicken all of the time! With a few simple steps you can create healthy masterpieces in the kitchen that you and your family will enjoy! You will not miss the sugar, salt and fat!
