Heart Healthy Soup for a Cold Day!
Butternut Squash Soup with Apples
2 small butternut squashes peeled and cubed with the seeds removed
3 small apples of your choice
1-2 tsps of cinnamon
1/2 tsp cumin
1 Jalapeno pepper or one small Thai chili pepper (optional)
1 container of low sodium vegetable broth
1 sweet white onion
1 tsp of garlic
1/2 tbsp of olive oil
1/2 tsp of kosher salt
Finely chop onion and add to a large pot with olive oil. Saute on medium heat until translucent. Add the garlic, salt, cumin and cinnamon and mix well until fragrant
Add the butternut squash, apples, chili pepper and vegetable broth. Cook on medium heat until the squash is fork tender
With an immersion blender, blend the soup until smooth
Serve warm and enjoy!
