Heart Healthy Soup for a Cold Day!


Butternut Squash Soup with toasted pumpkin seeds for garnish

Butternut Squash Soup with Apples


2 small butternut squashes peeled and cubed with the seeds removed

3 small apples of your choice

1-2 tsps of cinnamon

1/2 tsp cumin

1 Jalapeno pepper or one small Thai chili pepper (optional)

1 container of low sodium vegetable broth

1 sweet white onion

1 tsp of garlic

1/2 tbsp of olive oil

1/2 tsp of kosher salt


  • Finely chop onion and add to a large pot with olive oil. Saute on medium heat until translucent. Add the garlic, salt, cumin and cinnamon and mix well until fragrant

  • Add the butternut squash, apples, chili pepper and vegetable broth. Cook on medium heat until the squash is fork tender

  • With an immersion blender, blend the soup until smooth

  • Serve warm and enjoy!


Jessica's Health Tips: Butternut squash is high in vitamin A, Vitamin C, Magnesium and potassium. It has a lot of fiber and water content to keep you full for longer. The apples add some natural sweetness to the dish. This is healthy comfort food at its best!
